INGREDIENTS:
4 medium Chicken Breasts
2Tbs EVOO
1.5 cups chpd Mushrooms
1.5 cups Fresh Spinach
1.5 cups Chicken Broth
2 Tbs butter
3 ozs Cream Cheese
1/2 cup Heavy Cream
2 cloves garlic
1Tbs Tarragon
1 tsp Dried Basil
1/2 tsp Cayenne
Salt to taste
INSTRUCTIONS:
-In EVOO cook chicken over medium heat. Remove from pan.
-Lower heat & add butter and garlic. Sauté for about a minute. Add chicken stock and deglaze pan.
-Lower heat to low/medium.
Add mushrooms and when they cook down add Heavy cream, spices & incorporate.
-Add softened cream cheese in 4-6 pieces. Cook until it’s nearly melted.
Add Spinach and stir to wilt.
-Place chicken back in pan and coat with sauce.
Simmer 3-5 minutes.
